Cuvée Vieilles Vignes
Les vendanges sont manuelles. Les raisins sont transportés dans des
paniers en osier qui permettent l'écoulement des jus et évite leur
oxydation. Après un tri sévère, la vendange entière non égrappée fermente longuement sous des températures strictement contrôlées. Les vins du Château de La Tour sont des Grands Crus de Tradition. Ainsi, les techniques les plus modernes, cuves inox, pressoirs
pneumatiques, alliées à des rendements très faibles (29 hectolitres par
hectare pour les 5 dernières récoltes, soit moins de 30cl par cep de
vigne) et à une utilisation judicieuse de bois neuf selon la puissance
du vin, sont là exclusivement à leur service.
BURGHOUND 2009 91-94 François Labet told me that 2007 is a “curious vintage in the sense that
some wines seem as though they’re classic pinots and others are extremely ripe, as t hough they were the product of a hot
vintage, which 2007 clearly was not. One has to ask where this ripeness came from because the summer
was cool and damp and even the excellent weather we were blessed with
right before the harvest was clear and dry but not hot. As is our habit, we
began picking quite late in the context of the vintage, which is to say on the 6th of
September but because of the ideal weather, we were able to take our time over
2 weeks. There was quite a bit of sorting
required, some of it for rot-affected berries but the majority of what was
eliminated was for under ripeness. Sugars were really quite good at around 12.5% though the
crop was small, in fact I would say that it was fully.
